Okay so this isn’t exactly healthy. It can be GMO-free if you get the organic corn ingredients though. This is the original recipe, an awesome side for any occasion. I promised a few friends and family this recipe. So here goes:
Corn Casserole (Serves 5-8)
Ingredients:
2 eggs
1 can cream style corn
1 can whole sweet kennel corn (drained)
8 oz. sour cream
1 box Jiffy corn muffin mix
1 can cream style corn
1 can whole sweet kennel corn (drained)
8 oz. sour cream
1 box Jiffy corn muffin mix
2/3 stick butter
Steps:
- Put oven on 350 degrees, put casserole dish with the butter inside the oven while it’s preheating.
- Mix the eggs, canned corns, sour cream, and gently mix in the corn muffin mix.
- Pour mixture on top of butter. Do Not Mix, just even it out a little and close the oven.
- Bake for 35-45 mins depending on your oven and color likeness. Sometimes I like mine browned on the top a bit, like pictured below.
